Quick Italian Pesto

Here is a quick pesto recipe I use whenever I need some quality pesto….

2 Garlic Cloves

1 c. Basil Leaves (Packed Down)

2 tsp. Lemon Zest

4 tsp. Lemon Juice

1/4 c. Pine Nuts

1/4 c. Parmesan Chesse

1/4 tsp. Salt

Pinch Of Black Pepper

1/4 c. Olive Oil

1/4 c. Romano Cheese

Combine in Cuisinart or other suitable food processor. Scrape down sides occasionally. Pesto can be frozen over a months time.

Deruny (Ukrainian Potato Pancakes), Bopsya Approved

My bopsya (grandmother) used to make these all the time for me. They are a staple of the Ukrainian diet and good for either breakfast, lunch or dinner. A true “anytime” snack, served with sour cream. Prep time about 15 mins, total cook time 40 mins.

1 Large Onion

6 Potatoes

2 tbl. Flour

2 Eggs

3/4 tsp. Black Pepper

1 pt Sour Cream

In a large bowl puree all ingredients except for the dairy. Heat oil and drop in spoon full of mixture. Cook as pancakes. Serve with chilled sour cream.

This site is my shoot off of my “Looking Through The Lens” photo-blog site. I found myself wanting to put recipes on my main photo blog and i didnt think the cooking mixed so well with my graphic portfolio, thus the creation of this site.
